A food journey to Lebanon

Food is a catalyst for many great things! Need to start a conversation? Food. Need to fix a problem? Food. Want to win over someone? Food. Want happiness? Food. Want to shut someone up? Food. Right, so you get my point. It is food that makes the world go round! (I will fight you on this one!)

And just like that I connected with Abbass Fawaz over food for food! Abbass is from Lebanon and has lived in Fiji for the past 3 years. He is the Executive Chef for Warwick Resort. After seeing my vlogs, he suggested we collab and talk about food and showcase some recipes that you could potentially try.

I have not met anyone from Lebanon on a one-on-one basis and thought it would be cool to meet Abbass. I have heard so much about Lebanon and obviously I had a million question to ask him! (sorry not sorry about that Abbass!)

One the menu was lamb kabsa and dessert Knafeh. The lamb was precooked and ready by the time I had arrived and all that was left was to put together the rice ingredients. Obviously, I did nothing but watch and ask questions. This dish is pretty simple yet requires the right ingredients and spices, I can’t reveal Chef’s secret!

I have to say, Abbass works like magic in the kitchen and even had dessert ready in no time. It all came together like art really and I just watched and ate and talked a lot. I also learned how detailed Lebanese food is and the importance of using the right spices and herbs. It was also pretty cool to learn about their culture, music, fashion, living.

A Saturday well spent and yes, we have a vlog coming soon so stay tuned for that!
